This is a great versatile recipe that you can alter to exactly what you and your family like. We make this all summer long to enjoy for quick lunches and snacks. Works great as a side dish for dinner as well.
Antipasto Salad
This recipe can be altered to add or remove any ingredients you like. See note at the bottom for adding pasta to it.
Ingredients
- 2 Celery Stalks
- 1 Yellow Pepper
- 1 Orange Pepper
- 1 Cucumber
- 1/2 Red Onion
- 1 Carrot
- 1 block Pepper Jack Cheese
- 1 block Colby Jack Cheese
- 1 package Mini Pepperoni
- 1 Salami
- Wish Bone Italian Dressing
- McCormick Salad Supreme
Instructions
- Chop all ingredients into bite size pieces.
- Add all ingredients to a large bowl and coat with seasoning and dressing.
- Stir well and place in the fridge overnight to allow the flavors to absorb and marinate together.
Notes
This recipe taste best if made the day before and left to marinate overnight. You may need to add more dressing in the morning if too much was absorbed.
If you want to add pasta, cook to al dente and mix with the rest of the ingredients (the pasta will absorb more dressing than it would without).
